Soft & Chewy sweet potato brownies
Ciao! I found this recipe online and decided to tweak it a little bit and its super easy and guilt-free because all ingredients are unrefined, dairy-free and GF.
Ingredients (2 portions)
1 cup of sweet potato
1 cup peanut/almond butter
1 cup agave syrup (any other sugar free alternative works fine)
1 cup of cocoa powder
1tbsp vanilla (optional)
1tbsp salt (optional)
A general rule of thumb is to put equal portions of each ingredient: so if you see that you have 100g of sweet potato then use 100g of all the other ingredients.
Directions
Preheat oven to 180°C
Cut in half the sweet potato and line it on parchment paper. Once the oven is warm, place it inside and wait c.30-40 mins until it is soft.
In the meanwhile, mix in a bowl all the other ingredients together until you have a soft batter.
Once the sweet potato is cooked, scrape the pulp away from the skin and add it to the mixture. You will notice that the texture is nice and moist.
You may also add any topping of your choice before placing it back in the oven. You can use chocolate chips or walnuts maybe!!
Place mixture in a baking tin and make sure you use one that makes the brownie two 2-3cm tall.
Cook for 20-30 minutes, depending on your oven.
